Semolina
Durum wheat is a kind of hard wheat which it’s dense and hard tissue, high protein content and also its strong gluten make it the best choice for producing all kinds of Pasta. Dough products such as macaroni, Spaghetti, Lasagna, and etc. have been made from Semolina. The semolina is provided of milling hard wheat under a special process. Best dough products have been produced from only durum wheat. Qualitative traits of semolina for producing dough products include: brightness, yellow pigments, high percentage of protein (for forming gluten properly) and low bacterial count which guarantee long life maintain products.
